Spanish Rice

One of my mother's favorite recipes is her Spanish rice, which she serves with everything.

2 tablespoons olive oil
1 chopped onion
1 clove minced garlic
2 cups long-grain white rice
3 cups chicken stock
1 cup diced tomatoes
1 teaspoon oregano
1 teaspoon salt


In a large skillet brown rice in olive oil, over medium high heat. Add onion and garlic. Cook and stir frequently until onions soften, about 4 minutes.

In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth and simmer. Cover. Cook 20 minutes on low. Remove from heat and let stand for 5 minutes before serving.
